How soft serve is hitting the soft spot this Summer

By Neil Roake

BOOK NOW

The first time I spotted soft serve as a dessert was that electric vibes evening spent at Bar Raket in Antwerp, served for a whopping 11 euros. Yesterday, at the brand new Turbo (named after the classic SAAB 900 motor) and sister restaurant to De Tros, I spotted Honey Toast Soft Serve with dulce de leche. Now, I see that soft serve is literally popping up everywhere!

STACH
Oatly has partnered with various collaborators, including Sweet Heat Hot Honey, for soft-serve pop-ups at Stach Nieuwe Spiegelstraat 56. Immerse yourself in summer flavours such as Paloma or Margarita (with a salted rim!). Go for the vegan Oatly softy with toppings such as olive oil and salt, served at most other Stach stores, or make it dance with a disco dip.

PAINDEMIE
Traditional Dutch boerenjongens (brandy-infused raisins) make the soft serve pop at Paindemie. They join the caramelized pecans, salted caramel, and caramel fudge to create a flavour bomb. Sweet and cool for a summer day. Book Paindemie here!

SAINT-JEAN
Soft serve and coffee make sense at the uber-cool vegan bakery Saint-Jean’s new deli. Located just across the road from SAINT-JEAN Bakery, their deli shop is the new destination for savoury baking, sandwiches, natural wine, and home goods. Try their Affogato or their signature pistachio swirl topped with roasted pistachios. Can’t get any cooler than this.

CAFÉ CENC
The team behind Bar Parry and Balthazar’s Kitchen have taken over the old BambinO space on Vijzelgracht, and their olive oil and sea salt softy is a good way to end one of their meals. It’s a walk-in-only spot with an interesting bar menu for light snacks, including dried sausage wild boar fennel (watch out for bullets), shrimp heads with sesame aioli and pimentón, or broad beans with rosemary salt. Innovative dishes can only be expected from this solid team.

FORT NEGEN
Fort Negen is always out there with interesting pastry inventions, and now… the soft serve croissant! Strawberry and rhubarb soft, coconut-lime-matcha, or apricot-rosemary, swirled into their croissant basket with an always unexpected selection of toppings: Choco miso crumble, Cornflake crumble, or Disco dip. It seems the flavours are ever-changing, so watch their Insta.

PLUK
Brazilian vibes are in full force at Pluk in the Nine Streets with their açaí soft serve ice cream.

FEBO
There are 22 of these automatic shops around Amsterdam, so you’re never far from a kroket or kaassoufflé. Finish off a rowdy night with their 4-euro cup of soft serve swirled with liquid Kit Kat and stabbed with a mini Kit Kat finger. Take a break, have a Kit Kat!

TEA GUYS
Matcha is continuing to have its moment in the sun, and the Tea Guys on Albert Cuypstraat 61-H use their ceremonial-grade matcha to make their softy with optional toppings of tapioca pearls, sweet red adzuki beans, or Oreo crumbs.

BAKKERIJ HARTOG
Bakkerij Hartog (famous for their whole wheat bread loaves) has launched the speculaas waffle (soft serve sandwiched between two circles of speculaas biscuits) with optional toppings—I’ll take the ginger and rosemary, please.

On the other side of the Netherlands, in Laren, Ron Blaauw sells delicious pandan soft serve ice cream in his ice cream parlour Ron Gastrobar Supersoft. Hopefully, more of these exciting flavours will arrive in Amsterdam soon!
